Not Ketchup Ham Fritters

Use your leftover ham from Easter or Christmas to make these fun “rainbow” fritters. Serve with Cherry Chipotle Not Ketchup or Smoky Date Not Ketchup on the side. You can deep-fry them in balls as described below or cook them in a frying pan like pancakes.

Ingredients
  • 2 cups Bisquick (or your favorite baking mix)
  • 2 eggs
  • 1/2 cup milk
  • 1/4 teaspoon hot sauce, such as Tabasco (optional)
  • 1 cup leftover ham, chopped
  • 2 green onions, chopped
  • 1 cup any color bell pepper, chopped (use red, yellow and orange for the rainbow effect)
  • 1/2 cup shredded cheese (use Monterey jack, pepper jack, Swiss, Gruyere, or cheddar)
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper (freshly ground is best)
  • Oil, for frying
  • Cherry Chipotle Not Ketchup or Smokey Date Not Ketchup

Directions

  1. In a large bowl, whisk together the Bisquick, eggs, milk, and hot sauce.
  2. Stir in the ham, green onions, bell pepper, shredded cheese, salt, and pepper. The batter will be thick.
  3. In a heavy medium-sized pot, pour in about 2 inches of oil. Heat over medium-high heat until the oil reaches 350 degrees F. If you don’t have a deep-fry thermometer, put in a little bit of the batter – if it sizzles and starts to brown, you’re good to go.
  4. Using a small spring-loaded ice cream scoop or two teaspoons, carefully drop in about 1 Tablespoon of batter for each fritter. If you’re using teaspoons, use one to push the batter off the other into the oil.
  5. Fry about 90 seconds until golden brown, turning the fritters over halfway through. If they brown too quickly, turn down the heat – you need to leave them in the oil long enough to cook the insides.
  6. Remove the finished fritters from the oil and let rest on a plate or baking sheet lined with paper towels.
  7. Serve immediately with Cherry Chipotle or Smoky Date Not Ketchup on the side for dipping.
